NISHINSOBA

Nishin means herring which is like sardine. Soba means buckwheat noodles with hot soup.

Nishinsoba is soba in hot broth, topped with simmered herring. It includes chopped long green onions, seaweed, and a slice of boiled fish paste. It is very famous in Kyoto, because it originated there. Why is a herring topped on the noodles? The reason is because a herring is rich in protein, minerals, vitamins. Plus, the combination of a herring and soba taste better. People in Kyoto usually eat this on New Year's Eve.
